Growing up, my family had a cherished tradition of gathering around the dinner table every Sunday. It was a special time filled with laughter, storytelling, and, of course, the joy of sharing a hearty meal together. Among the many dishes that graced our table, one that always made an appearance was a comforting casserole, bubbling with flavor and warmth. Fast forward to today, I’ve come to appreciate how that nostalgic love for casseroles can be reinvented with healthier ingredients. This realization inspired my creation of the Cheesy Spaghetti Squash Chicken Casserole. This delightful dish not only nourishes the body but also evokes the same warmth and joy that those Sunday meals brought to our family.

Cheesy Spaghetti Squash Chicken Casserole

Ingredients
  

1 medium spaghetti squash

2 cups cooked, shredded chicken (rotisserie chicken works great)

2 cups broccoli florets (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup ricotta cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spaghetti Squash: Cut the spaghetti squash in half lengthwise and scrape out the seeds. Drizzle the insides with 1 tablespoon of olive oil, and sprinkle with salt and pepper. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until the flesh is tender and can be easily shredded with a fork.

      Cook the Broccoli: If you’re using fresh broccoli, steam or blanch the florets for 3-4 minutes until they're bright green. If using frozen, simply thaw and drain. Set aside.

        Make the Cheese Mixture: In a large bowl, combine the shredded chicken, cooked broccoli, cherry tomatoes, mozzarella, Parmesan, ricotta, garlic powder, Italian seasoning, and remaining tablespoon of olive oil. Mix well and season with salt and pepper to taste.

          Combine with Spaghetti Squash: Once the spaghetti squash is done cooking, remove it from the oven and let it cool slightly. Using a fork, scrape out the spaghetti-like strands into the mixing bowl with the chicken and cheese mixture. Stir until everything is well combined.

            Assemble the Casserole: Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Add Toppings (Optional): If desired, sprinkle extra mozzarella or Parmesan cheese on top for an extra cheesy crust.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it sit for 5 minutes. Garnish with fresh basil before serving.
