1 lb boneless, skinless chicken breasts, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup broccoli florets (fresh or frozen)

1 cup cream of mushroom soup (or homemade equivalent)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 teaspoon paprika (optional for extra flavor)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for greasing and topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a skillet over medium heat, add a tablespoon of olive oil. Season the diced chicken with garlic powder, onion powder, salt, pepper, and paprika. Cook until the chicken is browned and fully cooked, about 5-7 minutes. Remove from heat.

      Mix the Components: In a large mixing bowl, combine the cooked rice, cooked chicken, broccoli florets, cream of mushroom soup, and milk. Stir until well combined.

        Add the Cheese: Fold in half of the shredded cheddar and mozzarella cheeses into the mixture. This will enhance the creaminess.

          Transfer to Casserole Dish: Lightly grease a 9x13-inch casserole dish with olive oil or butter. Pour the rice and chicken mixture into the dish and spread it evenly.

            Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheeses on top of the casserole.

              Breadcrumb Topping: In a small bowl, mix the breadcrumbs with a drizzle of olive oil or melted butter. Sprinkle this mixture evenly over the cheese layer.
