Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

¾ cup buttermilk

1 tablespoon honey (optional, for a hint of sweetness)

1 cup extra sharp cheddar cheese for stuffing

1 egg (beaten, for egg wash)

Fresh chives or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in Butter: Add the cold, cubed unsalted butter to the dry mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Add Cheese and Wet Ingredients: Stir in the shredded sharp cheddar cheese until evenly distributed. In a separate bowl, mix the buttermilk and honey (if using), then pour this mixture into the dry ingredients. Stir gently until just combined; do not overmix.

Form the Dough: Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a rectangle about 1 inch thick.

Cut the Biscuits: Using a biscuit cutter or a drinking glass, cut out biscuits from the dough and place them on the prepared baking sheet. Gather the scraps, re-press into a rectangle, and repeat until all dough is used.

Stuff the Biscuits: For each biscuit, carefully cut a pocket in the side or top using a paring knife. Stuff each biscuit with about 1 tablespoon of extra sharp cheddar cheese, pinching the biscuit edges to seal.

Brush with Egg Wash: Brush each biscuit with the beaten egg to give it a shiny finish.

Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden and risen.

Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with fresh chives or parsley if desired. Serve warm and enjoy the cheesy goodness!
