Cheesy Broccoli and Chicken Rice Casserole

2 cups cooked rice (white or brown)

2 cups cooked chicken, shredded or diced

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of chicken soup

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (or to taste)

1/2 teaspoon paprika (optional)

1/2 cup breadcrumbs (for topping)

2 tablespoons olive oil or melted butter (for breadcrumbs)

Instructions
 

Preheat oven: Preheat your oven to 350°F (175°C).

    Prepare broccoli: In a small pot, steam the broccoli florets for about 3-4 minutes until tender but still bright green. Drain and set aside.

      Mix the base: In a large mixing bowl, combine the cooked rice, shredded chicken, steamed broccoli, shredded cheddar cheese (reserve some for topping), cream of chicken soup, milk, garlic powder, onion powder, black pepper, and salt. Stir until everything is well combined.

        Transfer to casserole dish: Grease a 9x13 inch (or similar size) casserole dish lightly with cooking spray or olive oil. Pour the rice mixture into the dish, spreading it evenly.

          Add toppings: In a small bowl, mix the breadcrumbs with the olive oil or melted butter until the crumbs are moistened. Sprinkle the breadcrumb mixture evenly over the casserole, then add the remaining shredded cheddar cheese on top.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.

              Cool and serve: Remove from the oven and let it cool for about 5 minutes before serving. This allows the casserole to set a bit for easier serving.
