Cheesy Broccoli and Chicken Casserole

2 cups cooked, shredded chicken (about 2 chicken breasts)

3 cups fresh broccoli florets (or 2 cups frozen)

1 cup cooked quinoa (or rice)

1 cup sharp cheddar cheese, shredded

1 cup cream of chicken soup (or homemade)

½ cup sour cream

½ cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or melted butter (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Broccoli: If using fresh broccoli, steam the florets in a pot of boiling water for about 2-3 minutes until slightly tender. Drain and set aside. If using frozen, simply thaw and drain excess water.

      Mix Ingredients: In a large mixing bowl, combine the shredded chicken, cooked quinoa (or rice), steamed broccoli, ¾ cup of the cheddar cheese, cream of chicken soup, sour cream, milk, garlic powder, onion powder, Dijon mustard, and salt and pepper. Mix until all ingredients are well combined.

        Assemble Casserole: Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.

          Top with Cheese and Breadcrumbs: Sprinkle the remaining ¼ cup of cheddar cheese over the top. If you like a crunchy topping, mix the breadcrumbs with olive oil or melted butter and sprinkle them on top of the cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 15-20 minutes, or until the casserole is hot and bubbly, and the top is golden brown.

              Let It Rest: Once done, remove from the oven and let it cool for about 5-7 minutes before serving. This will help the casserole set.
