Cheesy Beef and Rice Casserole

1 lb ground beef

1 cup long-grain rice, uncooked

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chilies

2 cups beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup frozen corn

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

Fresh chopped parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with non-stick spray or olive oil.

    Cook the Beef: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes. Add the ground beef, cooking until browned and crumbled. Drain excess fat.

      Mix the Ingredients: In the same skillet, stir in the uncooked rice, diced tomatoes with green chilies (with juice), beef broth, corn, cumin, paprika, salt, and pepper. Mix well to combine all ingredients.

        Transfer to Baking Dish: Pour the beef and rice mixture into the prepared baking dish, spreading it evenly.

          Add the Cheeses: Sprinkle the shredded cheddar and mozzarella cheese generously over the top of the casserole.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown, and the rice is tender.
