Ingredients

2 cups rigatoni pasta

1 pound boneless, skinless chicken breasts, diced

1 cup BBQ sauce (your favorite brand)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped fresh parsley (for garnish)

Optional: sliced green onions for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rigatoni pasta and cook according to package directions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken to the skillet. Season with paprika, salt, and black pepper. Sauté the chicken for about 5-6 minutes until cooked through and lightly browned.

Add Onion and Garlic: Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Combine Pasta and BBQ Sauce: Lower the heat to medium-low. Add the cooked rigatoni and BBQ sauce to the skillet with the chicken, onion, and garlic. Stir well to fully coat the pasta and chicken in the sauce.

Incorporate the Cheese: Sprinkle the cheddar and mozzarella cheese over the mixture and stir until melted and well combined, about 2-3 minutes. The cheese should become gooey and creamy, coating the pasta nicely.

Garnish and Serve: Remove from heat and garnish with chopped parsley and sliced green onions if desired. Serve hot, and enjoy your cheesy, BBQ chicken pasta!
