Cheesy BBQ Chicken Nacho Bake

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

4 cups tortilla chips

2 cups shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen, thawed)

1 jalapeño, sliced (optional for heat)

1/2 cup green onions, chopped

1/2 cup sour cream (for topping)

1/4 cup fresh cilantro, chopped (for garnish)

1 teaspoon smoked paprika

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken with the BBQ sauce, smoked paprika, salt, and pepper. Mix until the chicken is well coated.

      Layer the Nachos: In a 9x13 inch baking dish, spread half of the tortilla chips evenly across the bottom. Spoon half of the BBQ chicken mixture over the chips, then sprinkle half of the black beans and corn on top. Layer half of the shredded cheddar cheese over this.

        Repeat the Layers: Add another layer of the remaining tortilla chips. Top with the rest of the BBQ chicken mixture, the remaining black beans, corn, and then sprinkle the rest of the cheddar cheese on top.

          Add Jalapeños: If a spicy kick is desired, scatter the jalapeño slices across the top of the nacho layers.

            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is melted, bubbling, and slightly golden.

              Garnish and Serve: Remove from the oven and let cool for a couple of minutes. Drizzle sour cream on top and garnish with chopped green onions and cilantro before serving.
