4 large russet potatoes

2 cups fresh broccoli florets

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

1/4 cup milk

3 tablespoons unsalted butter

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

Green onions, chopped (for garnish)

Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean under running water and dry them. Poke holes all around each potato with a fork, then rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack (or on a baking sheet to catch drips) and bake for 45-60 minutes, or until the insides are soft when pierced with a fork.

    Prepare the Broccoli: While the potatoes are baking, steam the broccoli florets until they are tender-crisp, about 3-4 minutes. You can also boil them in salted water for about 2 minutes. Drain and let them cool slightly, then chop into smaller pieces.

      Make the Cheddar Filling: In a large mixing bowl, scoop the insides of the baked potatoes out, leaving about 1/4 inch of potato around the skin. Add in the butter, sour cream, milk, garlic powder, salt, pepper, smoked paprika (if using), and half of the cheddar cheese. Mix well until creamy and combined.

        Combine: Fold in the steamed broccoli pieces into the potato filling mixture until evenly combined.

          Stuff the Potatoes: Generously fill each potato skin with the cheddar and broccoli mixture. Top each filled potato evenly with the remaining cheddar cheese.
