2 medium ripe bananas

1 cup grated carrots (about 2 medium carrots)

1 cup rolled oats

1/2 cup almond flour (or any flour of your choice)

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts (walnuts or pecans), 1/4 cup chocolate chips

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork until smooth.

      Mix Wet Ingredients: Add the grated carrots, honey (or maple syrup), applesauce, and vanilla extract to the mashed bananas. Stir until well combined.

        Add Dry Ingredients: In a separate bowl, mix together the rolled oats, almond flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until everything is evenly combined. If you’re using nuts or chocolate chips, fold them in at this stage.

          Form Bites: Using a spoon or your hands, scoop out small portions of the mixture and shape them into bite-sized balls or patties, about 1 inch in diameter. Place them onto the prepared baking sheet, spacing them about an inch apart.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the bites are firm and lightly golden on the edges.
