1 sheet of puff pastry (thawed if frozen)

3 large yellow onions, thinly sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon sugar

Salt and pepper, to taste

4 ounces goat cheese, crumbled

1/4 cup fresh thyme leaves (or 1 teaspoon dried thyme)

1 egg, beaten (for egg wash)

Optional: arugula for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook for about 15-20 minutes, stirring occasionally, until they are soft and golden brown. If they start to brown too quickly, reduce the heat.

      Add Flavorings: Once the onions are caramelized, stir in the balsamic vinegar and sugar. Cook for an additional 2-3 minutes until the vinegar evaporates. Season with salt and pepper to taste, then remove from heat.

        Prepare the Puff Pastry: Roll out your puff pastry on a lightly floured surface to fit a tart pan or baking sheet. Transfer the pastry to your tart pan, trimming any excess edges. Prick the bottom with a fork to prevent it from puffing up.

          Assemble the Tart: Spread the caramelized onions evenly over the pastry. Sprinkle the crumbled goat cheese and thyme leaves over the top.

            Egg Wash: Brush the edges of the puff pastry with the beaten egg to give it a nice golden color during baking.

              Bake the Tart: Place the tart in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and puffed around the edges.
