Cajun Grilled Shrimp with Pineapple Rice

For the Cajun Grilled Shrimp:

1 lb jumbo shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 lime, juiced

Salt and pepper to taste

For the Pineapple Rice:

1 cup jasmine rice

2 cups coconut milk (or water)

1 cup fresh pineapple, diced

1/2 red bell pepper, chopped

1/4 cup green onions, chopped

1 tablespoon soy sauce

Salt to taste

Fresh cilantro for garnish (optional)

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the olive oil, Cajun seasoning, garlic powder, smoked paprika, lime juice, salt, and pepper. Add the shrimp and toss to coat evenly. Let the shrimp marinate for at least 30 minutes in the refrigerator.

    Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium-sized saucepan, combine the rinsed rice and coconut milk (or water) and bring to a boil. Add a pinch of salt, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed.

      Add Pineapple and Veggies: Once the rice is cooked, fluff it with a fork. Mix in the fresh pineapple, red bell pepper, green onions, and soy sauce. Stir well to combine and heat through. Adjust seasoning to taste and keep warm.

        Grill the Shrimp: Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Grill the shrimp for about 2-3 minutes per side or until they turn pink and opaque.
