Butternut Squash Pizza

1 medium butternut squash, peeled and cubed

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon dried thyme

1 teaspoon garlic powder

½ teaspoon red pepper flakes (optional)

1 pre-made pizza crust (store-bought or homemade)

1 cup mozzarella cheese, shredded

½ cup ricotta cheese

¼ cup grated Parmesan cheese

Fresh sage leaves, for garnish

Balsamic glaze, for drizzling

Instructions
 

Roast the Butternut Squash:

    - Preheat your oven to 400°F (200°C).

      - Place the cubed butternut squash on a baking sheet. Drizzle with olive oil, and season with salt, pepper, thyme, garlic powder, and red pepper flakes if using. Toss until evenly coated.

        - Roast in the oven for 25-30 minutes until soft and caramelized, stirring halfway through.

          Prepare the Pizza Crust:

            - While the squash is roasting, preheat the oven according to the instructions for your pizza crust (if homemade, follow your recipe).

              - Roll out or stretch the pizza dough onto a pizza stone or baking sheet lined with parchment paper.

                Assemble the Pizza:

                  - Once the butternut squash is done roasting, reduce the oven temperature to 450°F (230°C).

                    - Spread the roasted butternut squash evenly over the pizza crust, leaving a small border for the crust.

                      - Dollop spoonfuls of ricotta cheese across the top, then sprinkle shredded mozzarella and grated Parmesan evenly over everything.

                        Bake the Pizza:

                          - Place the pizza in the preheated oven and bake for about 12-15 minutes, or until the cheese is melted and bubbling and the crust is golden brown.

                            Garnish and Serve:

                              - Once out of the oven, let the pizza cool for a couple of minutes. Garnish with fresh sage leaves and drizzle with balsamic glaze before slicing.
