4 medium sweet potatoes

2 cups cooked shredded chicken (rotisserie chicken works well)

1/2 cup buffalo sauce (adjust based on desired heat level)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup Greek yogurt or sour cream

1/4 cup chopped green onions (plus more for garnish)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly, poke them with a fork multiple times, and wrap each one in aluminum foil. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Cook the Chicken Mixture: While the sweet potatoes are baking, in a medium bowl, combine the shredded chicken with buffalo sauce and cream cheese. Mix thoroughly until the chicken is well coated. Season with salt and pepper to taste.

        Combine with Cheese: Gradually stir in the shredded cheddar cheese and chopped green onions into the buffalo chicken mixture. Set aside.

          Stuff the Sweet Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Carefully unwrap the foil and slice each sweet potato lengthwise, creating a pocket. Gently fluff the insides with a fork and season with a bit of salt.

            Fill and Bake Again: Generously spoon the buffalo chicken mixture into each sweet potato, allowing it to overflow if desired. Place the stuffed sweet potatoes back on the baking sheet and return to the oven for an additional 10-15 minutes, or until everything is heated through and the cheese is melty.
