Ingredients

1 head of cauliflower, cut into florets

1 cup all-purpose flour

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

1 tablespoon olive oil

4 large whole wheat or spinach wraps

1 cup shredded green lettuce

½ cup diced tomatoes

½ cup crumbled blue cheese

¼ cup ranch or blue cheese dressing (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Make the Batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add the water, mixing until you have a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are well coated. Shake off any excess batter before placing them on the prepared baking sheet.

Bake the Cauliflower: Once the baking sheet is full, drizzle the cauliflower with olive oil. Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.

Toss with Buffalo Sauce: Remove the cauliflower from the oven and carefully transfer them to a large mixing bowl. Pour the buffalo sauce over the hot cauliflower and toss to coat evenly.

Assemble the Wraps: Lay out your wraps on a clean surface. Start by placing a generous handful of shredded lettuce in the center of each wrap. Add a layer of crispy buffalo cauliflower, followed by diced tomatoes and crumbled blue cheese.

Add Dressing (Optional): If you like, drizzle some ranch or blue cheese dressing over the filling for an extra kick of flavor.

Wrap It Up: Fold the sides of the wrap in and roll it up tightly from the bottom to the top, securing all the delicious fillings inside.

Serve and Garnish: Cut each wrap in half diagonally and garnish with fresh cilantro or parsley if desired. Serve with extra buffalo sauce or dressing on the side for dipping.

Prep Time: 15 minutes | Total Time: 55 minutes | Servings: 4 wraps
