Blueberry Oat Breakfast Bars

2 cups rolled oats

½ cup almond flour (or all-purpose flour)

½ cup honey or maple syrup

½ cup unsweetened applesauce

1 cup fresh or frozen blueberries

1 tsp vanilla extract

1 tsp ground cinnamon

½ tsp baking powder

¼ tsp salt

¼ cup chopped nuts (almonds or walnuts, optional)

¼ cup chocolate chips (optional, for a sweet addition)

Instructions
 

Preheat the oven to 350°F (175°C) and line a 9x9 inch baking dish with parchment paper, allowing some overhang for easy removal later.

    Mix dry ingredients: In a large bowl, combine the rolled oats, almond flour, ground cinnamon, baking powder, and salt. Stir until well mixed.

      Combine wet ingredients: In another bowl, whisk together the honey (or maple syrup), unsweetened applesauce, and vanilla extract until smooth.

        Blend mixtures: Pour the wet ingredients into the dry ingredients and stir until everything is combined. Gently fold in the blueberries, nuts, and chocolate chips (if using).

          Transfer to the baking dish: Spread the mixture evenly into the prepared baking dish and press down firmly to compact the mixture.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool and cut: Allow the bars to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out. Transfer to a wire rack to cool completely before cutting into squares or rectangles.

                Store: Enjoy immediately, or store the bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
