Ingredients

1/2 cup chia seeds

2 cups almond milk (or any milk of your choice)

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

1 cup fresh blueberries (plus extra for topping)

A pinch of salt

Toasted almonds or shredded coconut (for garnish)

Instructions

Mix the Base: In a large mixing bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, cinnamon (if using), and a pinch of salt. Whisk until well combined.

Let it Sit: Allow the mixture to sit for about 10 minutes. This will give the chia seeds time to absorb the liquid and swell.

Stir Again: After 10 minutes, give the mixture another good stir to break up any clumps of chia seeds.

Add Blueberries: Gently fold in the fresh blueberries, reserving some for topping later.

Refrigerate: Pour the mixture into serving containers or jars and cover them. Place them in the refrigerator for at least 4 hours, or ideally overnight, so the chia seeds can fully absorb the liquid and thicken to a pudding-like consistency.

Serve: When ready to serve, give the pudding a good stir, then top with extra blueberries, toasted almonds, or shredded coconut for added texture and flavor.

Enjoy: Dig in with a spoon and enjoy your delicious, nutritious blueberry chia seed pudding!
