BBQ Chicken & Corn Nachos

2 cups cooked shredded chicken (rotisserie or grilled)

1 cup BBQ sauce (your choice, sweet or spicy)

1 bag (12 oz) tortilla chips

1 cup corn kernels (frozen, canned, or fresh)

2 cups shredded cheddar cheese

1 cup black beans, rinsed and drained

1 jalapeño, sliced (optional, for spice)

1/2 cup red onion, finely diced

1/2 cup diced tomatoes

1/2 cup fresh cilantro, chopped

1/4 cup sour cream (for drizzling)

1 avocado, diced (for topping)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: In a mixing bowl, combine the shredded chicken with the BBQ sauce. Mix well until the chicken is evenly coated.

    Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for the nachos.

      Layer the Nachos: On a large baking sheet or oven-safe platter, spread out half of the tortilla chips in an even layer. Top with half of the BBQ chicken mixture, half of the corn, half of the black beans, half of the diced tomatoes, and half of the red onion. Sprinkle half of the shredded cheddar cheese on top.

        Add More Layers: Repeat the layers with the remaining tortilla chips, BBQ chicken, corn, beans, tomatoes, red onion, and top with the remaining cheddar cheese. If you’re using jalapeños, scatter them on top of the nachos now.

          Bake: Place the assembled nachos in the preheated oven. Bake for about 15-20 minutes or until the cheese is melted and bubbly.

            Garnish: Once out of the oven, sprinkle the nachos with the chopped cilantro and diced avocado. Drizzle with sour cream.
