6 large eggs

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup shredded cheese (cheddar or feta)

1/4 cup milk (whole or any preferred dairy alternative)

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

Salt and black pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

      Add Spinach and Tomatoes: Stir in the chopped spinach and halved cherry tomatoes, cooking for an additional 2-3 minutes until the spinach is wilted. Remove from heat and set aside.

        Whisk Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

          Combine Mixtures: Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to distribute the vegetables evenly. Sprinkle the shredded cheese on top.

            Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is lightly golden.
