Baked Chicken Taquitos with Avocado Crema

2 cups cooked shredded chicken

1 cup shredded Monterey Jack cheese

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

12 small corn tortillas

Olive oil spray

For the Avocado Crema:

1 ripe avocado

1/2 cup sour cream or Greek yogurt

1 tablespoon lime juice

1/4 teaspoon garlic salt

Fresh cilantro leaves (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Filling: In a medium bowl, combine the shredded chicken, Monterey Jack cheese, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Mix well until the ingredients are fully incorporated.

      Warm the Tortillas: To make the corn tortillas pliable, wrap them in a damp paper towel and microwave for 30 seconds. This will help prevent them from cracking when rolling.

        Assemble the Taquitos: Place about 2-3 tablespoons of the chicken mixture towards one end of a tortilla. Roll it tightly, tucking in the sides as you go. Repeat this process for all the tortillas and filling.

          Bake the Taquitos: Place the rolled taquitos seam-side down on the prepared baking sheet. Lightly spray the taquitos with olive oil spray to help them crisp up. Bake in the preheated oven for 15-20 minutes, or until they are golden brown and crispy, flipping halfway through for even cooking.

            Make the Avocado Crema: While the taquitos are baking, prepare the avocado crema. In a blender or food processor, combine the avocado, sour cream (or Greek yogurt), lime juice, and garlic salt. Blend until smooth and creamy. Adjust seasoning to taste.
