Baked Apple Rollups with Yogurt Dip

4 medium-sized apples (Granny Smith or Honeycrisp work well)

1 cup of brown sugar

1 tablespoon of ground cinnamon

1 teaspoon of vanilla extract

1 tablespoon of lemon juice

1 package of puff pastry (2 sheets, thawed)

1 egg (for egg wash)

1 tablespoon of flour (for dusting)

½ cup of chopped walnuts (optional)

Powdered sugar (for garnish)

For the Yogurt Dip:

1 cup of Greek yogurt

2 tablespoons of honey

1 teaspoon of almond extract (or vanilla extract)

A pinch of cinnamon

Instructions
 

Prepare the Apples: Preheat your oven to 375°F (190°C). Start by peeling and coring the apples. Cut them into thin slices and place them in a large bowl. Add lemon juice, brown sugar, ground cinnamon, and vanilla extract, tossing until the apples are evenly coated.

    Prepare Puff Pastry: On a lightly floured surface, roll out each sheet of puff pastry into a larger rectangle and cut each sheet into four equal squares.

      Assemble Rollups: Take a spoonful of the apple mixture and place it on one corner of each puff pastry square. If you like, sprinkle a few chopped walnuts over the apples for added crunch. Roll the pastry over the apple filling, tucking the edges in to create a neat roll. Repeat with all squares.

        Egg Wash: Beat the egg in a small bowl and brush it over each rollup. This will give them a nice golden-brown color when baked.

          Bake: Place the rollups on a parchment-lined baking sheet, spaced apart to allow for puffing. Bake in the preheated oven for about 20-25 minutes or until they are golden and puffed up.

            Make the Yogurt Dip: While the rollups are baking, prepare the yogurt dip by combining Greek yogurt, honey, almond extract, and a pinch of cinnamon in a bowl. Mix well until creamy and smooth.
