Back-to-School Pasta Jar Salad

Ingredients
  

2 cups of whole grain rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell pepper, diced (any color)

1/2 cup black olives, sliced

1 cup baby spinach or arugula

1/2 cup mozzarella balls or cubed feta cheese

1/4 cup fresh basil, chopped

1/4 cup red wine vinegar

1/4 cup extra virgin olive oil

2 teaspoons Dijon mustard

1 teaspoon honey (optional)

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, honey (if using), salt, and pepper. Adjust seasoning to taste.

      Layer the Salad: In a large mason jar or salad container, start layering the ingredients in the following order:

        - First, add the dressing at the bottom to keep the salad from getting soggy.

          - Next, add the cooked rotini pasta to soak in some of the dressing.

            - Follow with the cucumber, bell pepper, and black olives.

              - Add the cherry tomatoes next, followed by the mozzarella balls or feta cheese.

                - Finally, top off with the baby spinach or arugula and garnish with chopped basil.

                  Seal and Store: Securely close the mason jar or container. If using a large container, make sure it’s tightly covered. Store in the refrigerator for up to 4 days.

                    Serve: When ready to eat, shake the jar to mix the ingredients and drizzle extra dressing if desired. Enjoy your refreshing and colorful pasta salad!
