Ingredients

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup buttermilk (or regular milk with 1/2 tablespoon vinegar)

1 large egg

2 tablespoons melted butter

1 cup finely diced peeled apples (preferably Granny Smith or Honeycrisp)

1 tablespoon brown sugar

1/2 teaspoon vanilla extract

Optional: whipped cream or ice cream for serving

Optional: additional cinnamon for dusting

Instructions

Preheat Your Waffle Maker: Begin by preheating your waffle maker according to the manufacturer’s instructions.

Prepare the Apple Mixture: In a medium bowl, combine the diced apples, brown sugar, and vanilla extract. Set aside to let the flavors meld together.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and melted butter until fully blended.

Combine Ingredients: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Don't overmix – it's okay if there are a few lumps. Fold in the apple mixture carefully to distribute the apples throughout the batter.

Cook the Waffle Bites: Lightly grease the waffle maker with non-stick spray or a brush of melted butter (if required). Pour a small amount of batter onto the preheated waffle maker, just enough to cover the surface (this depends on the size of your waffle maker). Close the lid and cook according to the manufacturer’s directions until the waffles are golden brown and crisp, usually about 3-4 minutes.

Serve: Once cooked, carefully remove the waffle bites and serve warm. You can dust them with additional cinnamon and serve with whipped cream or a scoop of vanilla ice cream for a delicious treat!

Store Leftovers: If you have any leftovers, they can be stored in an airtight container in the refrigerator for up to two days. Reheat in a toaster or oven to restore crispness.
