3 medium-sized apples, peeled and diced (such as Granny Smith or Honeycrisp)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

For the Granola Crumble:

1 cup rolled oats

1/2 cup almond flour (or blended oats for a nut-free version)

1/3 cup honey or maple syrup

1/2 cup unsweetened shredded coconut (optional)

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

For Serving:

Greek yogurt or whipped cream (optional)

Extra apple slices for garnish

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it with cooking spray.

    Prepare the apple filling: In a large mixing bowl, combine diced apples, brown sugar, cinnamon, vanilla extract, lemon juice, and a pinch of salt. Toss to coat evenly. Set aside to let the flavors meld.

      Make the granola crumble: In a separate bowl, mix together the rolled oats, almond flour, honey (or maple syrup), shredded coconut, melted coconut oil, vanilla extract, cinnamon, and salt. Stir until everything is well combined and crumbly.
