Apple Crumble Breakfast Parfait

3 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter

For the crumble topping:

1 cup rolled oats

½ cup all-purpose flour

¼ cup brown sugar

½ teaspoon ground cinnamon

¼ teaspoon salt

⅓ cup melted coconut oil or unsalted butter

For the yogurt layer:

2 cups Greek yogurt (plain or vanilla)

1 tablespoon honey or maple syrup (optional, for sweetness)

For serving:

Fresh apple slices and a sprinkle of cinnamon for garnish

Additional honey or syrup, as desired

Prepare the apple filling: In a medium saucepan over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook, stirring occasionally, for about 5-7 minutes until the apples are tender but still hold their shape. Remove from heat and let cool slightly.

    Make the crumble topping: In a mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Pour in the melted coconut oil or butter and mix until the mixture resembles wet sand.

      Bake the crumble: Preheat your oven to 350°F (175°C). Spread the crumble mixture on a baking sheet lined with parchment paper. Bake for about 15-20 minutes, or until golden brown, stirring halfway through for even cooking. Remove from the oven and let cool.

        Prepare the yogurt layer: In a bowl, mix the Greek yogurt with honey or maple syrup, if using, until well combined. Adjust sweetness according to your preference.

          Assemble the parfait: In clear cups or glasses, layer 1/3 of the yogurt on the bottom. Follow with 1/3 of the cooked apple filling, then 1/3 of the crumble topping. Repeat the layers two more times, finishing with a layer of crumble on top.
