Ingredients

For the Cake:

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 large apple (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

For the Streusel Topping:

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 cup unsalted butter, cold and cubed

1/4 cup chopped walnuts or pecans (optional)

For Serving:

Powdered sugar (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Make the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set this mixture aside. In a large bowl, with an electric mixer, cream the softened butter and sugar until light and fluffy, about 3-4 minutes.

Incorporate Eggs and Vanilla: Add in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until combined.

Add Sour Cream and Dry Ingredients: Mix in the sour cream until well combined. Gradually add the dry flour mixture, mixing just until incorporated. Be careful not to overmix. Gently fold in the diced apple.

Prepare the Streusel Topping: In a small bowl, combine flour, brown sugar, and ground cinnamon. Cut in the cold, cubed butter using a fork or pastry cutter until the mixture resembles coarse crumbs. If using, stir in the chopped nuts.

Assemble the Cake: Pour the batter into the prepared pan, spreading it evenly. Sprinkle the streusel topping generously over the batter.

Bake the Cake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely. Optionally, dust the top with powdered sugar before serving.

Enjoy: Slice into squares and serve warm or at room temperature alongside your favorite brew!
