Ingredients

1 ½ cups all-purpose flour

½ cup brown sugar, packed

½ cup granulated sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

¾ cup unsweetened applesauce

¼ cup vegetable oil

1 teaspoon vanilla extract

1 ½ cups peeled, diced apples (such as Granny Smith)

¼ cup chopped walnuts or pecans (optional)

2 tablespoons coarse sugar for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

Whisk Dry Ingredients: In a large bowl, combine the flour, brown sugar, granulated sugar, baking powder, ground cinnamon, baking soda, and salt. Whisk until well combined.

Mix Wet Ingredients: In a separate bowl, whisk together the egg, applesauce, vegetable oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until Just combined. Be careful not to overmix; a few lumps are okay!

Fold in Apples: Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

Fill Muffin Tins: Scoop the batter into the prepared muffin tin, filling each cup about ⅔ full. If desired, sprinkle coarse sugar on top of each muffin for a sweet crunch.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Enjoy warm or at room temperature. Perfect with a pat of butter or a drizzle of honey!
