Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 cup snap peas

2 cups cooked rice (white or brown)

3 tablespoons soy sauce (low-sodium preferred)

3 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon garlic, minced

1 teaspoon ginger, grated

2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Cook the Rice: If you haven’t prepared the rice yet, start by cooking it according to the package instructions to have it ready for serving.

Prepare the Chicken: In a large skillet over medium-high heat, add the sesame oil. Once hot, add the chicken pieces and season lightly with salt and pepper. Sauté for about 5-7 minutes until the chicken is browned and cooked through.

Mix the Teriyaki Sauce: While the chicken is cooking, whisk together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger in a small bowl until well combined.

Add the Vegetables: Once the chicken is cooked, add the broccoli florets, sliced bell pepper, and snap peas to the skillet. Pour the teriyaki sauce over the chicken and vegetables. Stir well to combine and let it cook for another 5 minutes until the vegetables are just tender but still vibrant.

Assemble the Bowls: To serve, place a generous scoop of cooked rice in each bowl. Top with the teriyaki chicken and vegetable mixture. Garnish with sliced green onions and a sprinkle of sesame seeds for added flavor and crunch.

Enjoy: Serve immediately while hot, and enjoy the delicious, homemade teriyaki chicken bowls!
