Ingredients

8 ounces (about 225g) of penne pasta

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes (preferably fire-roasted)

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup fresh basil leaves, roughly chopped

½ cup grated Parmesan cheese, plus additional for serving

Crushed red pepper flakes (optional, for heat)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Garlic: In the same pot, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute, or until fragrant but not browned.

Prepare the Sauce: Add the diced tomatoes (with their juices) to the pot, stirring to combine. Bring to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld.

Add Cream and Seasoning: Pour in the heavy cream and stir in the Italian seasoning. Season with salt and pepper to taste. Let the mixture simmer for an additional 3-4 minutes until slightly thickened.

Combine Pasta and Sauce: Reduce the heat to low, then add the cooked penne pasta to the sauce. Toss to coat the pasta evenly. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

Incorporate Fresh Basil: Stir in the chopped fresh basil and ½ cup of grated Parmesan cheese, mixing until everything is well combined.

Serve: Divide the creamy tomato basil pasta into serving bowls. Top with additional Parmesan cheese and a sprinkle of crushed red pepper flakes for an added kick if desired.
