30-Minute Chicken Alfredo with Broccoli

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. During the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli, reserving about 1/2 cup of the pasta cooking water.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chicken pieces. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir continuously as the cream thickens slightly.

        Combine Ingredients: Reduce the heat to low, and gradually stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.

          Finish the Dish: Add the drained fettuccine, broccoli, and cooked chicken back into the skillet. Gently toss everything together until well combined and heated through. Adjust seasoning with salt and pepper if necessary.
