2 cups vegetable broth (or water)

3 cups fresh broccoli florets (or frozen)

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup cream cheese, softened

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

1/2 cup panko breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Rice: In a medium pot, bring vegetable broth (or water) to a boil. Stir in the rice, reduce heat to low, cover, and simmer for about 15 minutes, or until rice is tender and liquid is absorbed. Set aside.

    Prepare Broccoli: While rice is cooking, heat olive oil in a large skillet over medium heat. Add broccoli florets and sauté for about 3-4 minutes until bright green and tender-crisp. Remove from heat and set aside.
